When Katie sent me the link to the NYT article about the Bacon Explosion, little did she know I’d have to attempt it. After all, I’d conquered poultry with my turducken, pork would not defeat me. Today’s BBQ gave me the perfect opportunity to attempt it.
I made two Bacon Explosions; one went into the weber bare and came out two hours later unfurled like a flower, it’s outer layers black & crispy, but inner layers perfectly done. The other was wrapped up in foil and came out perfect. Upon slicing, though, it fell apart.
Notes for next time: use cooking string to keep the rolls intact, and use an electric knife to slice fast and true.
